Due to the fact that they are armed with slow firing weapons they have to mass them together to get as much as they can from them, on top of that loose infantry gets decimated by cavalry. Not sure what you mean by bowing to cannons, but it was important to stay in formation less you get mauled by cavalry. People do care, I am not saying that everybody follows them 100% of the time but in general they do. I don't know if hitting enemies with drones or missiles is a war crime though.
